Whole Roasted Cauliflower – 4 Delicious Recipes (Vegan)

Olive oil whole roasted cauliflower

Ingredients:

  • 1 cauliflower
  • 2-3 tbsp olive oil
  • Salt
  • Pepper

Method:

1. Preheat oven to 230C (450F).
2. Bring large pot of water to a boil, add 1 tsp salt. Add washed cauliflower. Boil 10-15 minutes. Drain.
3. Place the cauliflower on a baking try lined with parchment paper. Season with salt a pepper. drizzle with olive oil and coat the cauliflower with your hands.
4. Bake 15-20 minutes or until golden brown.

Whole cauliflower in breadcrumbs

Ingredients:

  • 1 cauliflower
  • 1 cup (90g) breadcrumbs
  • 1/4 cup (38g) sesame seeds
  • 1/4 cup (25g) grated parmesan
  • 1 egg
  • 1 teaspoon olive oil
  • 1/2 teaspoon mustard
  • 1 tsp salt,1/2 tsp pepper, 1 tsp garlic powder 

Method:

1. Preheat oven to 190C (375F).
2. Bring large pot of water to a boil, add 1 tsp salt. Add washed cauliflower. Boil 10-15 minutes. Drain.
3. meanwhile: in a small bowl crack egg, add olive oil, mustard, salt, pepper and garlic powder. Beat.
4. In a large plate/bowl mix breadcrumbs, sesame seeds and parmesan cheese.
5. Brush boiled cauliflower with the egg mixture, then coat with breadcrumb mixture.
6. Bake for 40 minutes, until golden and crispy

Mustard whole roasted cauliflower

Ingredients:

  • 1/3 cup Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp mayonnaise
  • 1 tbsp maple syrup/honey
  • 1 tsp Salt,  1/2 tsp pepper

Method: 

1. Preheat oven to 200C (395F).
2. Bring large pot of water to a boil, add 1 tsp salt. Add washed cauliflower. Boil 10-15 minutes. Drain.
3. Meanwhile: in a small bowl mix together mustard, olive oil, mayonnaise, maple syrup/honey, salt and pepper.
4. Brush boiled cauliflower with the mustard mixture.
5. Bake for 15-20 minutes.

Tahini and spices whole roasted cauliflower

Ingredients:

  • 1 cauliflower
  • 3 tbsp tahini paste
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1-2 tbsp water
  • 1 tsp salt, 1/2 tsp pepper, 1 tsp turmeric, 1 tsp paprika, 1/4 tsp cumin, 1/2 tsp garlic powder

Method:

1. Preheat oven to 200C (395F).
2. In a small bowl mix tahini paste, olive oil, lemon juice, water and spices.
3. Brush the cauliflower with the mixture.
4. Bake, covered, for 40-45 minutes. Then 15-20 minutes uncovered.
5. Second option (better in my opinion): boil the cauliflower for 10-15 minutes. Brush with mixture. Bake for 15-20 minutes.
